“Hummm…” that was my response to my neighbors query, “Hey – you want some green tomatoes?” And then, I remembered – Green Tomato Mincemeat Pie. This is a recipe which you just have to try – even though it looks kinda scary.
The amazing thing is that the green tomatoes arrive at just about the same time as the apples and apple cider and together they all get here just before Thanksgiving. I have not made this recipe in years, but I love it. It’s easy and it’s yummy! One thing though, you might want to wait until they try it before you tell the family what’s in it. Did I mention there is no meat in there?
Green Tomato Mincemeat Pie
6 cups (about 6) apples, cored and diced
4 cups green tomatoes, diced
1½ cups raisins
zest of ½ an orange
juice of 1 orange
1 cup apple cider
1¼ cups sugar
1 teaspoon cinnamon
⅛ teaspoon cloves
Combine the first 6 ingredients and simmer for about 20 minutes. Add the remaining 3 ingredients, reduce heat and simmer, stirring often, for about 30 minutes. Allow to cool completely and refrigerate overnight. Makes enough for 1-10” pie. See the What Kind of Pie am I Blog for Pie Crust recipe and baking instructions.
I am not sure why I did not include this recipe in Baking Pure & Simple, which of course is the perfect holiday gift for your loved ones who bake. I guess it just makes one more recipe to share in a blog instead.
